I made this berry pie for a soup and pie potluck with the Houston Chowhounds. Here is the recipe. It is almost shamefully easy.
1 small carton raspberries
1 small carton blueberries
1 small carton blackberries
2-3 small mangoes, diced
3-4 basil leaves, sliced in slivers very thin
2 tblsps. balsamic vinegar
2 tblsps. candied ginger, diced very small
3 packages of cream cheese, softened
1 14oz can of sweetened condensed milk
1 graham cracker crust
Combine all fruit with the basil, candied ginger, and balsamic vinegar.
Beat cream cheese and sweetened condensed milk until smooth.
Pour cream cheese mixture into the crust about halfway. Top with the fruit mixture. Refridgerate for at least 2 hours. Enjoy!
