Vegetarian Reubens

I love reuben sandwiches. Here is my vegetarian version.

2 sliced of rye bread
2 tblsp saurkraut
1 tblsp thousand island salad dressing
4 strips soy beef
enough swiss cheese for one sandwich

Toast bread. Thaw and heat soy beef. Layer bread, dressings, kraut, soy beef, and cheese. Toast in the oven until cheese is melted. Consume. Yum.
